This is the first year that I have ever brined the turkey.....this is also the first year that I ever even heard of brining the turkey. And this was the best tasting turkey......EVER!
I bought the brining mix from Crate and Barrel and it was wonderful! So that's what I'll be doing going forward.....brining the turkey!

I have actually never heard of brining a turkey. Gotta go do some research on that!
I've read it makes for a more moist turkey, but have no idea how to do it! Sounds like your turkey was a success though!
Okay, so here's what I did with my turkey. I mixed 1 cup of milk and 1 cup of brandy or cognac; placed the turkey in a plastic bag and poured in the mixture; put it in the fridge from Tuesday until Thursday; turned the turkey on Wednesday. Took it out Thursday morning; dumped the mixture, softened a stick of butter and chopped a package of fresh poultry herbs, mixed them with the butter and spread it under the turkey skin. Yummy -- you should try that one day Diane. Also when you have a chance, would you send me the recipe for your Christmas morning breakfast casserole? Is Johnny Boy going shopping for you tonight, or is he going to the hockey game with you?
