Lemon chicken ....

I have another recipe to share!
 
this one is from Ina Garten, the Barefoot Contessa
I love her show!
 
this recipe is so easy and quick and delicious!!
Johnny and I both loved it and I could see myself making this
one a lot.
here ya go........
 
  • 1/4 cup olive oil
  • 3 tablespoons minced garlic (9 cloves)
  • 1/3 cut dry white wine (this is optional)
  • 1 tablespoon grated lemon zest (2 lemons)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 1/2 teaspoon dried oregano
  • 1 teaspoon minced fresh thyme leaves
  • kosher salt and fresh ground black pepper
  • 4 boneless chicken breast, skin on (I used skinless and it was great)
  • 1 lemon
 
Preheat oven to 400 degrees
 
Warm the olive oil in a small saucepan over medium low heat, add the garlic, and cook for just one minute but don't allow the garlic to turn brown. Take off of the heat, add the white wine, lemon zest, lemon juice, oregano, thyme and 1 tsp salt, mix up and pour into a 9 x 12 baking dish
 
Pat the chicken breast dry and place them over the sauce. Brush the chicken with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
 
bake for 30 to 40 minutes, depending on the size of the chicken breast, until the chicken is done. if the chicken is not browned, put it under the broiler for 2 minutes. Cover the pan tightly with alum foil and allow to rest for 10 minutes. Serve hot with the pan juices.

A day with Declan ....

Saturday before last I kept Declan while
Jacquelyn and Bucky traveled to Charlestown for the day
Bucky brought him over around 7:30 and they returned that
night about 9:00.....so it was a long day for this grandma!
 
but one of the best days I've had in a long time
 
I fixed some breakfast for him around 8:00 and then he wanted to
get the bubbles and the sidewalk chalk
 
 
 
 

 
so we headed outside
after picking cherry tomatoes, playing sidewalk chalk and
blowing bubbles, he saw the metal tub and wanted to play in the water
so we drag that down to the patio, fill half way with water, take
his clothes off as he didn't have a bathing suit with him
and he had a blast......watering all of my flowers and playing
with the water hose.
we then had to head inside as it was about nap time
 
it was 9:00! Yes, we did all of that before 9:00!
You can always tell with Declan's been in the kitchen!
 
 
 
he settled down for a nap around 9:30 and slept for 1 hour and 15 minutes
I rested with him as he slept laying in my arms.......oh what a feeling!!
one of the best for this grandma!
 
He woke and had  his snack and then we decided to head over
to my mom and dad's for a visit. Packed up his lunch and off we went
 

 
 
he had fun over there and was being quite the show off for Memaw
 
 We waited to leave there so it would be his nap time....knowing he
would fall asleep in the car. And he did
 
Time for afternoon snack and then Johnny got home from work.
We played toys...he tore up my kitchen and then we decided to go
out for dinner........Mexican food, which Declan loves!!!
 
home and then more play
we could never get him to sleep for the night......and I'm sure Johnny playing
wild and throwing him up in the air didn't help, haha
but then Bucky, Jacquelyn and Jake came home and boy was he
happy to see his momma and daddy. They all spent the night
and this grandma, well I had a really good nights sleep!!!

Coffee mugs ...

My new collection ... Starbucks mugs!
 
I love these big, chunky mugs
 
I really like most all of Starbucks coffee cups/mugs but these
are slightly bigger so they are my favorite...holds more coffee!!
 
and these are the 4 I have so far
 
 
so the first one on the left, I love because it's white, has
a bright red ring at the bottom and has Starbucks in gold lettering
 
the next one I love because of the chunkiness of it...reminds
me of the mugs you would get at diners so long ago
 
the one top of that I love not only for the colors but it's the
"Richmond" mug
 
and the one on the right because it's Tiffany blue color...love it!!
 
I love going into Starbucks and looking through all of the mugs
to see if any catch my eye to add to my collection

Chorizo Stuffed Peppers ....

Here's what I cooked today
 
I changed a few things in the recipe so I put notes by that
 
  • 1 onion
  • 2 carrots
  • 4 cloves of garlic
  • 4 poblano peppers (I can never find these so I used green peppers)
  • 1/2 head cauliflower
  • 2 lbs  chorizo sausage (casing removed)
  • 6 ounces tomato paste
  • 1 tablespoon Worcestershire sauce (I did not use this as it contains sugar and you know how I feel about sugar!)
  • 1 stalk celery
  • 1 jalapeno pepper, seeds removed
  • 1 tablespoon dry oregano
  • 1 tablespoon dried tarragon
  • 1 cup tomato sauce
  • salt and pepper to taste
Cut the tops off of the peppers and remove seeds


 
In food processor place carrots, celery, cauliflower, garlic, and jalapeno. Pulse until finely chopped
 
in a large bowl, combine veggies from food processor with chorizo, tomato paste, oregano, tarragon, Worcestershire sauce, and salt and pepper
 
pour a cup of tomato sauce into the bottom of the crock pot
stuff your peppers with mixture and place upright in the crock pot. I used the remainder of the tomato sauce that was in the can and drizzled over the top of the peppers
 
cover and cook on low 8 to 10 hours.
 
 
delicious........another keeper!!
